i have one of walthers canning plants and want to know, how far out over the track, should the roof over the loading dock extend? if i put the roof edge in the middle of the track, the reefers roofs will not clear the under roof brackets. so, how far over the track should the roof edge extend?

Do a Google image search on Golden Valley Canning. The two most common approaches are to raise the whole building or to leave off the canopy. You'll find other ideas in the images.

was shimming it up with evergreen plastic tubing, then noticed it also would raise the loading dock higher than the reefer door bottom

The awning/roof over the loading dock is there to keep rain from contaminating product and making the dock slick and unsafe. Halfway across the car is far enough to catch and divert water so it drains just past the middle of the car roof and thence over the far side and away from the dock. In some cases, having the roof of the car covered just past near(dock) side was considered sufficient, relying on the drip edge of the car roof to divert any water that might go over the side above the car door.
Relationship to the lip of the dock is also important, depending on the plate used to span between the dock and the car door.

The box from Walthers shows a canopy over the truck loading area but not the rail area. Unless there is another canopy not shown in the demo model on the box.

the one i have does include an awning for the rail car side, which i did install. i thought the awning would be about in the car center, the roof braces foul the car roofs. so, quick fix, is back the building away from the track?

aaaaarrrr!!!!! am beginning to wonder if the research some of these companies do, id like the little old man spinning in the easy chair, throwing darts at a targets!!!! this canning plant is really cooking my grits!!!!!

Mike has the right idea on this... it is the relationship of the dock to the car more than the roof edge to the car.
