Am I correct to say the bright red double deck cab cars & coaches were pulled and pushed by FP-7's?

Looks more like E's, to me.
I would suggest bringing the question up on the PassengerCarList. I know there's at least a couple of very knowledgeable RI guys there. They helped me out a lot on my RI baggage car.

The FP7's didn't have HEP, so they wouldn't normally be seen on bi-level trains. The Bi-level power consisted of 3 F7As, 675,676 & 677, E6A 630, AB6s 750 & 751 (retired in 73), and a handful of second hand Union Pacific E8's and E9's rebuilt with HEP and painted red and yellow.
