Does anyone know if ESU makes a compatible decoder for this Loco? Looking to replace the factory installed soundtraxx 2 decoder board.

Without looking it up, I'm sure they do. It's just your basic SD45 engine.
Might even have more than one version.

You should be able to put a ESU in the Athearn. I have done an Athearn Genesis GP49 + SD70 and a RTR SD40. One with the full plug and play board that uses the "Atlas style" board 58821(GP49).
The SD70 uses a NixTrains decoder buddy with a 21 pin LS5. The RTR uses a Nixtrains decoder buddy and the 21 pin as well.
If you are US based make sure you get the DCC and not the multi protocol. The multiplier for speed curves are different, the multi protocol will not play well with other brands.
