It looks to me when derailments or accidents occur, many times grain trains/cars are involved.
I don't have any statistics, is it just a feeling, or are they more sensitive for derailments? Is it relative, or are there so many grain trains riding along in de US?

Not more prone than anything else. A lot of grain moves by rail.

Older cars without constant contact side bearings are often limited in speed since they are prone to hunt. They can also be a problem with harmonic rocking on jointed rail. There are rules in place to deal with these known issues, though.
Most of the derailments I've seen have an empty centerbeam involved, but my experience is primarily yard and industry movements.
